I’m seriously craving Vietnamese Spring Rolls right now. The worst part, is that I have no idea if our local market carries the rice paper wrappers or vermicelli, but I will adore the Nugget even more if I discover the ingredients today. For me… it’s really the mint that makes the whole roll. And if you force me to buy mint, I might just have to muddle some of it for a mojito… the shame!

It’s funny how summer makes your body hungry for light foods… sushi and BBQ and sangria, oh my! I can’t wait to eat outdoors in the sub-100 degree summer days! It’s something that was quite a luxury in LaLaLand.
