girl scout cookies at home

Saturday was, well, not a super happy day. Luckily it wasn’t for any really sad reason, but simply for the loss of two more weekends of basketball. I’m going to miss the facebook camaraderie of old friends shouting their spirit with voracious status updates, and random text messages from friends and foes around the country. But then again, I do have two more weekends of freedom than I’ve had for the past three years!

In order to wash away the pain… I made cookies. And not just any cookies… but imitation girl scout cookies!!!

Ladies and gentlemen… may I introduce you to the Samoa bar:

Mr. M happened to snatch me up some Thin Mints and Tagalongs this year, therefore this former girl scout was yearning for a box of her favoritest cookies: Samoas (aka. Caramel deLites). With no scouts parked outside the markets, I opted to find a recipe online and make them myself. I found a wonderful recipe for the original cookies at Baking Bites, but soon decided that the bar form of the cookie would be much easier and simpler to make.

The recipe [as copied from here] essentially involves three steps: baking crust, making the coconut topping, and chocolate dipping.

Step 1: the crust (ingredients: 1/2 cup sugar, 3/4 cup butter, softened, 1 large egg, 1/2 tsp vanilla extract, 2 cups all purpose flour, 1/4 tsp salt)

Step 2: Caramel/Coconut Topping (3 cupsshredded coconut (sweetened or unsweetened), 12-oz good-quality chewy caramels, 1/4 tsp salt, 3 tbsp milk)

Melt some seriously ooey-gooey caramels (like these Worther’s Originals) to get the best taste!

Meanwhile toast yourself some coconut so you can mix it in with the melting caramel…

…and spread it on the top of the crust to form the cookie bars.

Step 3: mmm….chocolate!

Melt some chocolate chips, and dip the base of the bars into the ooey-gooey yumminess. Stick the rest of it in a plastic bag, nip the corner, and drizzle on top!

Now not having any of my favorite cookies to compare them to, I can’t tell you it’s an exact carbon copy of the original, but it’s close enough for my mind to wander away from basketball and that’s all I needed!

    Now, you know where I live. And you know that I am home all by myself with nothing to keep me company. I could have stood on the sidewalk while you threw these at me. Heck, I would have driven to you to pick them up. These look glorious. Samoas are my favorite!!!!

    i am eagerly anticipating my delivery of girl scout cookies. i’m really hoping my sister doesn’t forget to bring them with her. again.

    i’d be mad if it weren’t for the fact that she has my cookies. lol.

    We’ll just have to find something else to post on FB about. Like cookie recipes. Or how much USC sucks. Or whatever. :)

    oooh, I wish I’d seen this last night! I was going to bake the cookies from the Baking Bites recipe (I’ve made them before with GREAT feedback) but they are ridiculously time consuming and I ended up making something else. Definitely worth it if you have the extra time though!
