new food week: day 4

And for the final home cooked meal of the week… we had soy ginger chicken last night! I used chicken breasts instead of chicken on the bone (I blame Costco for my endless supply), but everything else was the same.
Nothing spectacular to report for this meal, but definitely a good chicken/rice meal! The ginger really found its way into the chicken and the sauce thickened up quite well. I also liked that the only real “ingredients” I had to purchase were carrots and a piece of ginger root, so this would be an easy meal to push into a weekly rotation.

And there you have it folks! A week of cooking on the fly is complete and I’m ready to menu plan again. And for the blog’s sake, I’d like to keep up with the recipes and get some “shared” ones from you as well! So once I figure out the format, hopefully we can do a blog share of sorts and share our tried and true results. :)

    I like the sound of this meal because you can use some leftover ingredients from previous nights (carrots from the stew, chicken from the rollups). When you’re only cooking for two, it’s hard to use everything up! Earlier this week we made burgers one night, and then I made meatballs for a simple spaghetti dinner with the leftover ground beef. The key to leftovers in our house is to disguise them as “new” – otherwise it’s just me taking my tupperware to work the next day.

    I love the idea of a blog share. I think my goal for the month of November is to cook something different every night that I cook… though I won’t be cooking quite as much as normal, with Thanksgiving thrown in there.. and my husband is on night float, so I’m not sure how that will affect our dinner schedule. I was going to use my blog as a way to keep track of what I was cooking, though I’m not sure if my science readers will protest if I turn it into a cooking blog!

      @Julie – What about at least two recipes a week? Or just an entry recapping each week? :) I’m not sure anyone would protest significantly.
      I’m still trying to figure out the best way to capture the information… but when I do… we’ll definitely pull a blog share!
