HAM, MANCHEGO, AND FIG TARTINES

In anticipation of the first recipes heading up tomorrow (OMG you guys are GREAT!!!), I thought I’d share an easy/quick/oh so yummy appetizer I made yesterday. I can honestly say that I’m fully addicted to fig spread (I blame Patina group restaurants for always having it on their cheese plates), so when I saw this recipe in Gourmet Magazine, I was instantly drawn! And any reason to buy manchego works for me!

All you need to make this snack is manchego, fig spread (found by the cheese counter – I’ve bought it in Nugget & Whole Foods), ham or prosciutto, butter and a baguette! Just mix 1/2 stick of unsalted butter with 2 Tbsp of the fig spread, layer it on the baguette, and top with the prosciutto/ham and thinly sliced manchego! Tada! The full recipe is here as well.

Ok… now I’m salivating again. Ugh. Time to get out the leftovers!
