On New Year’s Day, we were hosting Mother & Father M (all the way from Pennsylvania) and instead of trying to find an open restaurant, we opted for cooking in. I had just received my Martha Stewart Living magazine, and in showing off a dessert that I wanted to attempt, a recipe for “Chicken, Leek & Mushroom Casserole” jumped out as a great dish for dinner the next night! We headed to the trusty Nugget market for our ingredients on NYE, and sometime after halftime of the Rose Bowl, Mr. M and his dad began the cooking!
I was sadly unable to snap a photo of the yumminess before Mr. M had cut into it, but trust me… it was ooey, gooey and pretty all around. Mr. M did the majority of the cooking this night, and while it wasn’t a quick recipe, it was definitely the perfect comfort food for a cold holiday night. And the leftovers were just as good as the real thing — which always makes a recipe so much more valuable to me.
